Itinerary Help: Wine Tours, Food, Fine Hotels

We are planning a 10 day trip for friends (in October) to Burgundy, Champagne, and Paris. Focus will be on self-drive wine (and champagne) tours, cheese tasting, great meals, and some sightseeing (Beaune and Dijon), time permitting. We%26#39;re thinking of 4 days in Burgundy; 2 days in Champagne and 4 days in Paris.

Burgundy...Accommodations:

* Want to base them in Dijon at Abbaye de la Bussiere. How impractical will this be to tour the Cote d%26#39;Nuits and Cotes d%26#39;Beaune being based in Dijon? (They will have a car) We were initially thinking of having them spend 2 days in Dijon, and 2 in Avallon at Chateau de Vault-de-Lugny with the opportunity of seeing some of Vezelay and driving to Montbard to see the UNESCO Abbaye de Fontenay and nearby Epoisses (cheese factory), but am beginning to think that there is too much to see along the Cotes d%26#39;Nuit and Cotes d%26#39;Beaune, so that they probably should stay for all 4 days in Dijon. (Wine preferences are Pinot Noir and White Burgundy (Chardonnay), so the Cotes d%26#39;Or is probably the best place to be for that...Thoughts?

* If they dine in Beuane (Hostellerie de Levernois or Lameloise), how impractical will it be to drive back to Dijon at night (after drinking some wine?) (the distance is 14 miles)

* HOW MANY DAYS IDEALLY TO SEE/EXPERIENCE COTE D%26#39;OR?

*How many of the towns along the Cotes d%26#39; Nuit and Cotes d%26#39;Beaune will they be able to see in 4 days? They are not early risers, and want to maintain a leisurely pace, not rushing here and there. What would an ideal period of time be to see all the towns in the Cote d%26#39; Or? (The distance is only some 60km, but I just don%26#39;t have a perspective of how long it would take to stop, taste, and take tours, stop for lunch, etc...)

* WHERE TO FLY INTO?

We thought we%26#39;d have them fly into Paris(CDG) and drive to Dijon (or take the TVG to Dijon and then pick up the car); then after Burgundy, drive to Champagne, then finally, drive to Paris (dropping the car off at CDG Airport, then taxi into Paris)...but we got an idea of possibly having them fly into Lyon so that they could have dinner at Paul Bocuse...and possibly staying at Villa Florentine in Lyon for a night, before heading up to Dijon...(a 2 hour drive)...not sure if it is worth all the packing and unpacking for one very special meal. Lyon seems a city worth its own trip, not just one day....Flying into Paris (3 hour drive or 1.5 hour TVG train ride into Dijon, vs Fly into Lyon with a 2 hour drive to Dijon...time about the same, but the opportunity to have dinner at Paul Bocuse Restaurant and see a bit of Lyon? Thoughts?

* As far as Champagne and Paris...haven%26#39;t done my planning, but Champagne seems pretty straight forward (Champagne house tours in Reims and Espernay, having them stay at Chateau Les Crayers)....Paris, we will make hotel and dinner reservations, but leave the rest up to their choosing.

Many, many thanks!
