Southern France by train/bus

My husband and I would like to visit southern France say from Bordeaux and eventually end up in Florence or Rome. Could someone advise what might be good towns or cities to spend say 5 to 7 days or so each and be able to branch out independently by public transport to surrounding areas. Whole trip to probably take approx 6 weeks.

Is public transport as easy as we found it in Italy from Florence where we recently spent 7 days.
